Necessary products:

500 - 600 g of eggplant

2 tablespoons fresh chopped parsley

garlic to taste

1 - 2 tablespoons oil

salt and spices to taste

Method of preparation:

Wash and dry the aubergines, cut them into strips about 6 - 7 mm thick, salt and leave for a while to let the juice. Heat the oil and put the sliced ​​aubergines in it, fry them with the lid closed for 15 minutes on medium heat. Then open the pan, stir, reduce the temperature, close again and let fry for another 15 minutes. You can cook without closing with a lid, but then you will have to either stir constantly or the hob will be very weak. At the end of frying, add the crushed garlic and chopped parsley, add spices of your choice, stir and immediately remove from the heat. Pour the aubergines into a suitable plate, salad bowl or other container, wait for them to cool to room temperature (you can also put them in the fridge) and then serve.
