Required products :
1 kg of eggplant
1.5 tablespoons oil
1.5 tablespoons flour + for rolling
2 tablespoons butter
2 onions
salt and ground black pepper to taste
chopped fresh parsley to taste
vegetable broth
sour cream
Method of preparation :
Wash the aubergines, cut them into large cubes and sprinkle with salt (you can use large ones). After an hour, rinse with water.
Roll the aubergines in flour and fry in hot oil until golden. Fry the onion separately.
Fry the flour in butter, pour as much broth as you prefer to make a sauce. Add sour cream. If desired, you can season with chopped garlic. Add salt and heat the mixture.
Mix the eggplant and onion, pour the cream sauce, add chopped fresh parsley and the dish is ready.
