Method of preparation :
Put a piece of tofu in a saucepan and pour hot water, simmer for 2 minutes. Then take it out and dry it on kitchen paper. When cool enough, cut it into cubes.
Season with soy sauce, sesame oil and black pepper. When the liquid is absorbed by the soy product, sprinkle with cornstarch.
In a large skillet, heat 2 tablespoons of fat. Bake the tofu bites for about 7-8 minutes on all sides until golden. Season with salt and pepper, remove from pan and set aside.
In the same pan, heat the remaining 1 tablespoon of olive oil and fry the olive oil and ginger for 1 minute. Add the vegetables and fry for 10 minutes until soft. Season with salt and pepper.
In a small bowl, mix the soy sauce, sesame oil, water and brown sugar, add the starch.
Return the tofu to the pan with the vegetables and pour over the resulting sauce. Cook for about 2 minutes to combine the flavors and the sauce thicken and serve.
