How To Cook Fried Mini Pizza Calzone With Mozzarella (panceroti) - Recipe

Required products :

  • 1 1/3 tea cup lukewarm water
  • 1 1/2 teaspoons dry yeast
  • 3 1/2 teaspoons flour
  • 1/4 tea cup grated Parmesan cheese
  • 1 teaspoon baking powder and salt
  • 2 teaspoons sugar
  • 3 tablespoons olive oil

 

For the filling:

  • 2 teaspoons tomato sauce
  • 3 tea cups grated ripe mozzarella
  • 1 cup fresh basil - chopped
  • salt to taste
  • frying oil
  • 2 tablespoons parsley per serving

 

Method of preparation :

Pour the yeast into the water and leave for 5 minutes to swell.

In a large bowl, mix 3 tea cups of flour, parmesan, baking powder, salt, sugar and stir.

Add 2 tablespoons of olive oil, mix with a spatula, add the yeast and knead.

Sprinkle with the remaining flour on the kitchen counter and knead the dough for 10 minutes.

Spread the remaining olive oil on a large bowl and place the dough in it, cover with a towel and wait for it to rise (about 1 hour until it doubles).

Cut into 14 equal parts and form a small ball from each.

Spread the loaves with your fingers in a circle with a diameter of 15 centimeters. In the center put 1 teaspoon of tomato sauce and 2 teaspoons of mozzarella. Sprinkle with basil and season with salt. Close in the middle, pressing the edges so that the filling does not come out.

When you have formed all the pancakes, heat a deep frying pan with fat. Fry them on each side for 3 minutes until golden. Arrange on kitchen paper to absorb the fat.

Sprinkle with parsley and serve with tomato sauce.
