Required products :

200 grams of flour
20 grams of butter
100 grams of ricotta cheese or other fresh cottage cheese
2 egg yolks
3-4 tablespoons liquid honey
5-6 tablespoons olive oil
peel of half a lemon
pinch ground cinnamon
pinch salt
water


Method of preparation :

Mix the flour with the butter and 1 tablespoon of olive oil. Put a pinch of salt, pour a little water and knead the dough, which should not be too hard.

Cover with plastic wrap and refrigerate for half an hour. Then roll it out thinly and cut into squares with a side of 3 centimeters.

Mash the ricotta with one egg yolk and finely chopped lemon peel. Add 1 tablespoon of honey, a pinch of cinnamon and mix thoroughly.

Put a little of the filling in the middle of the squares of dough, spread the edges with the second yolk and close with the remaining pieces of dough. Pinch, trying to get the air between the two layers.

Fry the ravioli in very hot olive oil until a yellow crust forms.

Remove the prepared ones on paper to absorb the excess fat.

Serve hot by pouring plenty of liquid honey over them.
