Required products :

1 large eggplant

1 pepper

1 carrot

1 tomato

1 onion

Method of preparation :

Wash and cut the eggplant into circles, which you arrange in a pan (without greasing it). Put the pepper whole, just clean it from the seeds. Bake them in the oven for 7 - 10 minutes. Meanwhile, grate a carrot, finely chop the onion and cut the tomatoes into pieces. Stew the last vegetables in oil. When you take the already softened eggplant and pepper out of the oven, peel them and cut the pepper into strips. Pour over the stewed vegetables and let everything stay on the stove until the products are ready.

Mash the garlic or chop it finely. Add it to the salad, add spices to taste, sprinkle with chopped parsley and season with vinegar.
