Required products :

  • 2 teaspoons water
  • 1/2 cup wild rice
  • pinch of salt
  • for the frittata:
  • 5 whole eggs + 2 egg whites
  • 2 tablespoons parsley, finely chopped
  • 1/2 teaspoon salt and pepper
  • a pinch of nutmeg
  • 2 teaspoons olive oil
  • 1 cup finely chopped red onion
  • 1 tablespoon finely chopped fresh rosemary (or 1 teaspoon dry)
  • 500 grams of mushrooms, different types, cut
  • 1/2 cup grated Parmesan cheese
  • 4 thin slices of prosciutto, finely chopped

Method of preparation :

First prepare the rice. Put it in a saucepan with water and salt. When it boils, reduce the temperature and cook for about 40-50 minutes on a low heat to absorb the liquid. Drain, you should finally get about 1 1/2 teaspoons of cooked rice.

30 minutes after you start cooking the rice, beat the whole eggs and egg whites, add parsley, salt and pepper.

Fry the onion in a pan with a fireproof handle, salt it and fry it for 3-4 minutes. Add rosemary and mushrooms, fry until the liquid separated from the mushrooms evaporates. Reduce heat and add cooked rice.

Pour the eggs into the pan with the other products and fry for 5 minutes. During this time, the edges will begin to tighten slightly.

Sprinkle with parmesan and prosciutto.

Transfer to the oven and bake on high heat until the eggs are ready.
