How To Cook Frittata With Quinoa, Spinach And Avocado - Recipe

We present you a healthy and delicious recipe suitable for breakfast. As you know, eggs are the best choice to start the day. Thanks to the proteins contained in the eggs, the dish will give you the energy you need and you will be full by noon.

Required products :

  • olive oil or cooking spray
  • 8 eggs
  • 1 1/2 teaspoons skim milk
  • 1/2 avocado - cut into cubes
  • 1/4 teaspoon feta cheese
  • 1/4 tea cup dried tomatoes
  • 1/2 cup spinach
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon quinoa
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon parmesan

Method of preparation :

Grease a deep pan with olive oil or spray it with cooking spray.

In a large bowl, mix the eggs together with the milk. Add the chopped avocado and crush the feta cheese. Finely chop the dried tomatoes and spinach leaves and add them to the eggs. Season with salt, oregano and thyme.

Wash the quinoa, drain it from the water and pour it over the other ingredients.

Spread the mixture in the prepared pan and cover with aluminum foil. Bake for 45 minutes in a preheated oven at 180 degrees.

Remove the foil, sprinkle with grated Parmesan cheese and return to the oven for another 10-15 minutes until the cheese is browned and golden.

Allow to cool before serving. Serve with fresh salad.
