Required products :

  • 175 milliliters of olive oil
  • 100 grams of brown sugar
  • 2 eggs
  • 225 grams of flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon powder
  • 1/2 teaspoon allspice
  • juice of 1/2 orange
  • juice of 1/2 lemon
  • 200 grams of dried fruit mix of your choice
  • 200 grams of apricot jam
  • powdered sugar for garnish (optional)

Method of preparation :

Preheat oven to 160 degrees. Grease and cover with baking paper 2 round trays with a falling bottom.

Combine olive oil, brown sugar, eggs, flour, baking powder and spices. Add the dried fruit and stir with a wooden spoon until smooth. Spread the dough evenly in the two pans and bake for 20-25 minutes or until dry.

Cool the marshmallows and spread with apricot jam. Glue them together. Sprinkle with powdered sugar if desired, cut into pieces and serve.
