How To Cook Fruit Parfait With Cognac And Lemon Liqueur - Recipe

Required products :

200 grams of strawberries, raspberries, blueberries or gooseberries (or a mixture thereof)

4 egg yolks

2 tablespoons sugar

6 tablespoons lemon liqueur

2 tablespoons cognac

1 teaspoon thick confectionery cream for whipping

Method of preparation :

Wash the fruit, pour it into a suitable container, pour the cognac and liqueur over them and leave for at least 30 minutes. Mix the yolks with the sugar, add 3 tablespoons of water, place the dish in a water bath and beat until thick foam. Then immediately put the container with the foam in another with cold water and ice, beat until the mixture cools.

Whip the cream, add it to the yolks, then pour the fruit. Mix everything carefully and distribute in metal molds. Freeze the dessert.

Before serving, transfer the parfait to the refrigerator for an hour and cut into pieces.
