This irresistibly delicious and colorful fruit pizza with a base of a large oatmeal biscuit, garnished with a topping of cream cheese and yogurt,
decorated with berries and pieces of kiwi, is a light dessert suitable for a children's party or for any day when you want to surprise
your children, and to pamper yourself.

Required products :

for the base:

  • 1 and 1/2 cup oatmeal
  • 1 cup wholemeal flour
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 large egg
  • 2/3 cup brown sugar
  • 1/3 cup coconut oil
  • 1/2 teaspoon vanilla extract

for topping:

  • 200 grams of low-fat cream cheese (at room temperature)
  • 1/2 cup low-fat yogurt
  • 3 tablespoons powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 3/4 cup chopped strawberries
  • 1 kiwi, cut into slices
  • 1/4 cup blueberries

* A tea cup is used to measure the quantities.

Method of preparation :

Preheat oven to 190 degrees.

Place a sheet of parchment paper in a round pan.

the basis:

Mix oatmeal, flour, cinnamon, baking soda, baking powder and salt in a medium bowl.

Mix in another medium bowl the eggs, brown sugar, coconut oil and 1/2 teaspoon of vanilla extract.

Add the wet ingredients to the dry ones and stir to mix well. The mixture should be obtained slightly dry.

Pour the resulting oatmeal into a round pan on parchment paper and press to the bottom so as to obtain an
even loaf.

Bake it in the preheated oven for about 20 minutes or until golden brown. When ready, allow to cool to
room temperature.

topping:

Beat the cream cheese, yoghurt, powdered sugar and vanilla in a medium bowl with an electric mixer until smooth.

assembly:

Spread the topping evenly on the cooled tray. Garnish with pieces of strawberries, kiwi and blueberries.
