Required products :

  • 1 teaspoon balsamic vinegar
  • 4 figs
  • 4-5 drops of lemon juice
  • 3 tablespoons olive oil
  • 1 peach
  • 2 pieces of prosciutto
  • ricotta to taste
  • 60 grams of arugula
  • 1 teaspoon brown sugar
  • 3-4 pistachios

 

Method of preparation :

Wash and dry the arugula.

In a small bowl, mix olive oil with balsamic vinegar and a few drops of lemon, add a pinch of salt and pepper. Stir.

Cut the figs in half, sprinkle with sugar and a pinch of salt. Coat them with olive oil and bake for 2 minutes on the grill, placing them with the cut down.

Assemble the salad: add a little salt to the arugula leaves, put them in a suitable dish and add half of the dressing. Then add the peach slices, figs, a few pieces of prosciutto and ricotta to taste. Sprinkle with pistachios and then pour the remaining sauce.
