Required products :

for bread:

  • 250 grams of flour
  • 5 grams of salt
  • 5 grams of dry yeast
  • 30 milliliters of olive oil
  • 180 milliliters of water

for the garlic mixture:

  • 1 head of garlic
  • olive oil
  • pinch of salt
  • a pinch of sugar
  • 125 grams of fresh mozzarella

Method of preparation :

To prepare the dough, put all the dry products in a food processor with attachments for kneading the dough, add olive oil and almost all the water. Be careful not to touch the yeast and salt until you start kneading.

Start mixing at a slow speed, gradually adding the remaining water until you get a smooth dough. This should take about 5 minutes.

Transfer the dough to a greased bowl, cover with a towel and leave to rise for two hours.

Roll the dough in a bowl to grease on all sides and transfer it to a floured kitchen counter. Divide the dough into two parts.

Mix it by stretching it forward and folding it back several times. Roll the dough into a roll.

To prepare the garlic mixture, preheat the oven to 200 degrees. Divide the garlic head and roast the cloves (without peeling them). Add olive oil and a pinch of sugar and salt. Cook for 20 minutes. Take them out of the oven and when they are cool enough to touch, squeeze the soft garlic from their skins.

Put the garlic on the bread rolls and form a baguette (baguette).

Place the loaves on a large baking tray, cover and allow to double.

Put a bowl of water (directly on the bottom of the oven) in the preheated oven. Place the oven rack on a higher level and preheat to 220 degrees.

Just before you put the bread in the oven, make three cuts in the dough.

Bake the baguettes for 30 minutes, then reduce the temperature to 200 degrees and bake for another 10 minutes.

The finished baguettes should be golden brown and have a slight sheen on them.

Remove the bread from the oven and allow to cool.

Cut the baguette, add a slice of mozzarella and bake each slice.
