Required products :

  • 3 heads of garlic
  • 2 sprigs of thyme
  • 2 sprigs of rosemary
  • 15 grains of black pepper
  • 1 1/2 teaspoons coarse salt
  • cold pressed olive oil

Method of preparation :

  • Divide the garlic cloves into cloves and clean them from the outermost paper-like wrapper. Do not remove the soft skins.
  • Put the cloves in a deep saucepan and add the thyme, rosemary, black pepper and salt.
  • Drizzle them with cold pressed olive oil just enough to cover.
  • Put the pan on low heat, being careful not to boil the olive oil.
  • Cook for about 45 minutes and remove from the heat to cool.
  • Transfer the garlic confit to a clean glass jar, close it tightly and store in the refrigerator for 2-3 weeks.

Note!

When you want to use it to make different recipes, remove the garlic cloves with a small spoon and close the jar tightly again.
