How To Cook Garlic Cream Soup With Crispy Baguette And Olives - Recipe

Required products :

75 grams of unsalted butter

2 heads of garlic

1 large onion (or 2 small)

3 small potatoes

2 teaspoons fresh milk (500 milliliters)

2 teaspoons chicken broth (or water)

salt to taste

 

For garnish:

4 - 6 slices of baguette (or favorite bread)

1/2 cup finely chopped black olives

2 tablespoons olive oil

freshly ground black pepper and salt

 

Method of preparation :

Boil the potatoes, peel them and cut into small cubes.

 

Peel the garlic, chop the onion.

 

Heat half the butter and fry the whole garlic cloves in it until golden (about 5-7 minutes).

  

Add onion, fry for another 2-3 minutes,

 

then pour the potatoes and the remaining oil. Fry everything together for another 7 - 10 minutes

 

and transfer to a suitable saucepan. Pour the milk and broth (or water),

  

put the soup to boil over medium heat for 15 minutes (until the potatoes are completely soft).

Remove from the heat and puree with a blender or puree directly into the pan.

 

Season with salt and pepper to taste, close the jar with a lid and leave for a while to absorb the flavors and aromas.

Meanwhile, make the slices. Fry them on both sides in a little oil until golden.

 

Finely chop the olives, add olive oil and season with salt and pepper.

 

Spread the finished mixture on the slices.
