Dilute the yeast in some warm water, let it foam. Add olive oil, salt and flour to the remaining liquid. Pour the leavening agent, mix by hand, knead the dough and leave to rise.
Roll out the crust, smear the surface with olive oil and crushed garlic, make holes in the marsh with your fingertips and garnish with chopped olives, tomatoes and rosemary sprigs. Add salt and pepper.
Preheat the oven, place the focaccia in a pan lined with parchment paper and bake until done. Serve warm.
