Required products :

  • 1 kg of parsnips, coarsely chopped
  • 3 tablespoons olive oil
  • salt and pepper to taste
  • 1 head of garlic
  • 3/4 tea cup of fresh milk
  • 4 tablespoons butter
  • 2 teaspoons thyme

Method of preparation :

Turn on the oven to preheat to 200 degrees while you cook the vegetables.

Season the parsnip with salt and pepper, pour olive oil over it. Cut off the end of the garlic and pour in the olive oil too. Put the parsnips in a pan, cover with foil and bake for 40 minutes. During this time, the parsnips will be soft if the garlic is not yet soft enough - continue to bake it for another 15 minutes. Cool.

Blend the parsnips with a blender. Squeeze the garlic cloves from the peel and add them to the vegetables. Add the milk, butter and thyme and combine again.

Finally, season the puree to taste and serve.

When serving, you can melt a little butter and pour the puree, you can also use olive oil.
