How To Cook Garlic Shrimp With Cauliflower Butter - Recipe

Required products :

  • 300 grams of shrimp, cleaned
  • 2 cloves garlic, pressed
  • 2 tablespoons olive oil
  • salt and freshly ground black pepper
  • 3 tablespoons white wine

Baked butter :

  • 3 tablespoons salted butter
  • 2 cloves garlic, crushed

Cauliflower puree :

  • 1/2 medium-sized cauliflower head divided into roses
  • 2-3 tablespoons butter / to taste /
  • 2/3 tea cup of fresh milk
  • salt and pepper to taste

For sprinkling :

  • fresh parsley

Method of preparation :

  • In a bowl, mix the shrimp, garlic and olive oil. Season with salt and pepper, stir and leave for 10 minutes.
  • Meanwhile, boil the cauliflower in boiling salted water for about 10 minutes until soft.
  • Drain and after it has cooled slightly, puree in a blender, together with the butter and milk. Season with salt and pepper to taste.
  • Melt the butter in a small pan over medium heat and add the crushed garlic cloves.
  • When the cloves turn golden brown, transfer them to a small bowl.
  • Once the butter is browned, remove the pan from the heat and pour the butter into the bowl with the garlic.
  • Prepare the shrimp by heating a pan over medium heat and roast the shrimp without adding fat for about 30-40 seconds on each side.
  • Sprinkle with wine and cook for another minute or so until it evaporates.
  • Serve the garlic shrimp on cauliflower puree, sprinkled with roasted butter and fresh parsley.
