For the sauce:
1 tsp water
50 g butter
2 egg yolks

Method of preparation:
Make incisions in the rind of the chestnuts and put them in boiling water to cook for about 20 minutes. Then peel them, put them in a saucepan, add salt, oil and water. Put all this to boil on low heat until ready. Chestnuts cooked in this way are a suitable garnish for birds and game. They become even tastier if you pour the following sauce over them: put 50 g of butter, salt, black pepper in a saucepan, pour 1 cup of water and wait for the mixture to boil. Remove from the heat and add 2 egg yolks. Stir. The sauce is ready.
