Necessary products:
450 grams of eggplant
8-10 medium mushrooms
1 medium onion
1.5-2 tablespoons oil
1.5 tsp cream
2 tablespoons coarse salt
pepper - optional
Method of preparation:
Wash the aubergines and cut them into small cubes. Sprinkle them with coarse salt and leave for 30 minutes to remove their bitterness. Cut the mushrooms into thin slices. Chop the onion and fry it in the melted butter. When the onion turns red, drain the aubergines from the liquid, rinse them under running water and add them to the onion. Fry for about 5 minutes. Then add the mushrooms and leave on the stove for a few more minutes. It's time for the cream, add salt and other spices if desired, leave to simmer for about 15 minutes. The garnish is ready.
