Many people think that Gelato is the Italian word for ice cream, but there is actually a big difference between ice cream and Mediterranean dessert.
If you've ever been to Italy, you've certainly tried the cooling cream, which has a very rich taste and aroma.
In fact, there are several basic differences between gelato and ice cream. Most importantly, ice cream contains a minimum of 10% fat, while gelato is made largely from whole milk, so the fat percentage is 5 to 7.
Unlike ice cream, Italian pastry is mixed less often, so less air enters it (between 25-30%), while with ice cream frequent stirring brings up to 50% air into the mixture. The ice cream is served frozen, and the gelato is served warmer, cooled to -5 degrees.
Because there is not as much fat in the gelato, the taste remains more intense.
The classic gelato ice cream has a creamy texture due to the eggs, contains whole milk, a little dry for stability, low in sugar. The eggs give the dessert a characteristic yellow color. Unlike commercial ice creams, gelato melts very quickly, which makes consuming it even more challenging.
