How To Cook Ginger Cheesecake - Recipe

Required products :

  • 180 grams of graham crackers + more crushed for serving
  • 1/2 teaspoon pecans + more serving
  • 1 tablespoon sugar + 3/4 teaspoon
  • 4 tablespoons melted butter
  • 3 sachets of cream cheese (200 grams each)
  • 1/3 tea cup sour cream at room temperature
  • 1/3 tea cup of cream for cooking at room temperature
  • 2 tablespoons molasses
  • 1 tablespoon starch
  • 1 teaspoon ginger powder
  • 1/2 teaspoon freshly grated nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 2 teaspoons vanilla extract
  • 2 whole eggs + 2 yolks, at room temperature
  • peel of 1 lemon per serving

Method of preparation :

Grind the crackers with pecans and 1 tablespoon of sugar until fine crumbs are obtained. Add the butter and combine again.

Transfer to a round tray, with detachable walls, 18 cm in diameter and press on the bottom and about 2.5 cm high on the walls.

Bake for 7-10 minutes at 185 degrees. Allow to cool, reduce the oven temperature to 160.

Beat the cream cheese, both types of cream, molasses, starch, spices and the remaining sugar with a mixer until the ingredients are combined. Add the vanilla and the eggs and yolks one by one.

Pour the milk mixture over the cooled pan and bake for about 40 minutes, until done.

Turn off the oven and leave the cheesecake in it for another 30 minutes.

Pass a knife between the walls of the pan and the cheesecake, but do not unclip the pan! Allow to cool for 4 hours at room temperature, then refrigerate for as long.

Pass the knife again between the walls of the pan and the cheesecake, then unclip them.

Sprinkle with peas, crackers, pecans and lemon zest.
