Necessary products :
1 tea cup of cream

  • 1 piece of ginger (as big as a thumb), cut
  • 2 teaspoons vanilla extract
  • 8 cloves, crushed
  • 6 grains of allspice, pounded
  • 2 broken cinnamon sticks
  • 1/4 teaspoon finely grated nutmeg
  • 4 teaspoons fresh milk
  • 8 eggs, divided into whites and yolks
  • 3/4 teaspoon sugar
  • 3/4 tea cup of alcohol of your choice - rum, bourbon, cognac, and you can combine them

Method of preparation :

Combine cream, ginger, vanilla, spices and 2 cups of milk in a saucepan. Simmer for 2-3 minutes, remove from the heat and set aside, let cool for 30 minutes.

Meanwhile, beat the yolks to a froth, add the sugar and salt. Stir to obtain a light fluffy cream - about 2-3 minutes.

Remove the spices from the milk mixture and return to the hob. Carefully add the yolks in a thin stream, stirring constantly. Leave on a low heat, stirring constantly for about 12-15 minutes to thicken the cream.

Put the pan in a large bowl of ice water to stop the cooking process. Allow to cool inside for 20-30 minutes, stirring occasionally.

Combine the alcohol with the remaining glass of fresh milk.

Just before serving, beat the egg whites with a mixer until soft peaks. Combine all ingredients and serve, grate the nutmeg at the last minute.
