Required products :

  • 2 tablespoons butter, cut into 15 small pieces
  • 2 tablespoons maple syrup
  • 2 hard pears, cut into circles
  • 1 and 1/2 cups wholemeal flour
  • 1/2 teaspoon baking powder
  • 2 teaspoons ginger powder
  • 1 teaspoon cinnamon powder + more for garnish
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • a pinch of ground cloves
  • 1/2 cup brown sugar
  • 1/2 cup boiling water
  • 1/3 cup molasses
  • 1/2 teaspoon baking soda
  • 2 eggs
  • 1/3 cup olive oil

* A tea cup is used to measure the quantities.

Method of preparation :

Preheat oven to 180 degrees. Spread 15 muffin tins and put in them a piece of butter and 1/2 teaspoon of maple syrup. Cut the pears into 15 circles, distribute them one by one in the molds.

Combine flour, baking powder, ginger, cinnamon, nutmeg, salt and cloves.

Mix the brown sugar, boiling water, molasses and baking soda to form a foam. Add the eggs, olive oil and flour mixture in succession, stirring constantly, until smooth.

Spread the dough in the muffin tins and bake for 18-22 minutes in the preheated oven.

Cool and serve, turning the cupcakes over. Garnish with cinnamon if desired.
