Gingerbread and carrot cake lovers will enjoy this gingerbread carrot bread . It becomes even softer and tastier after standing for several days.

Required products :

  • 100 grams of butter + more for greasing
  • 100 grams of brown sugar
  • 50 grams of black honey
  • 50 grams of light honeydew
  • peel of 1 orange
  • peel and juice of 1 lemon
  • 1 large carrot, grated (140 grams)
  • 5 small pieces of ginger, chopped
  • 175 grams of self-swelling flour
  • 1/4 teaspoon baking soda
  • 2 teaspoons ginger powder
  • 1/4 teaspoon ground black pepper
  • 2 eggs
  • 140 grams of powdered sugar

Method of preparation :

Turn the oven to 180 degrees. Grease and cover the bottom and sides of a baking tray with parchment paper.

Put the butter, sugar, dark and light molasses and half of the lemon and orange peels in a saucepan and heat until melted and mix all the ingredients.

Add the grated carrot, 3/4 of the chopped ginger, flour, baking soda, salt, ginger powder, black pepper and eggs and mix well to get a smooth dough. Pour into the bread pan and bake for 45 minutes, or until done. Cool for 20 minutes and remove from the pan.

Sift the powdered sugar, mix with the remaining crusts and mix with enough lemon juice to obtain a smooth and thick glaze.

Decorate the completely cooled bread with the glaze and sprinkle with the remaining chopped ginger. Set aside the glaze to dry, cut into slices and serve.
