Required products :

  • 2 1/2 teaspoons flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 110 grams of butter
  • 2 teaspoons sugar
  • 2 eggs
  • 450 grams of ricotta
  • 3 tablespoons lemon juice
  • 1 teaspoon lemon peel

For the glaze:

  • 3 tablespoons lemon juice
  • 1 teaspoon lemon peel
  • 1 1/2 teaspoons powdered sugar

 

Method of preparation :

Preheat oven to 190 degrees.

In a medium bowl, mix the flour with the baking powder and salt.

 

In a separate (larger) bowl, combine the butter and sugar, beat with a mixer for 3 minutes, until creamy. Add the eggs one at a time, beating after each one.

 

Then add the ricotta, lemon zest and juice to the cream and beat.

 

Pour the flour, but do not beat more, and stir.

 

Scoop out the dough with a tablespoon and place on a tray with a sheet of parchment in it, using another spoon. Bake the cookies for 15 minutes (until golden on the edges).

 

Remove from the oven and leave in the pan for 20 minutes.

Make the glaze by mixing powdered sugar with lemon juice and zest. Stir until smooth.

 

Cover each cookie with half a teaspoon of it (they should be chilled) and flatten.

 

Wait 2 hours before serving the sweets so that the glaze can harden.
