Required products :

  • 2 1/2 teaspoons flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 teaspoon butter at room temperature
  • 3/4 tea cup of sugar + more for decoration
  • 1/4 teaspoon hot red pepper
  • 3 teaspoons lemon peel - grated
  • 2 yolks + 1 whole egg
  • 1/2 teaspoon vanilla extract
  • 3/4 tea cup lemon cream

Method of preparation :

Mix the flour, salt and baking powder.

Using a mixer, beat the butter with the sugar, pepper and 1 1/2 teaspoons of lemon zest until creamy. Add the egg yolks and vanilla and beat again.

Add the flour to the low level of the mixer. Once the ingredients are absorbed, make 2 balls, which you wrap in foil and refrigerate for 2 hours.

Preheat oven to 175 degrees.

Roll out the dough about 1 cm thick on a floured baking sheet. Cut circles, and on half of them make a small circle in the center.

Beat the whole egg in a bowl and spread the pierced cookies and sprinkle with sugar, sprinkle with a little lemon zest.

Bake for 12 - 15 minutes.

Cool them completely, then stick them with the lemon cream - use a whole cookie for that, and stick the candied one on top.
