Required products :

  • 125 grams of soft butter (1 sachet)
  • 125 grams of sugar crystals
  • 2 eggs, broken
  • 1/4 teaspoon almond extract
  • 250 grams of white gluten-free flour
  • 75 grams of ground almonds
  • 1 handful of peeled whole almonds

Method of preparation :

Beat the soft butter with the sugar - use an electric mixer until the fluffy cream is light. Beat the eggs one by one in the mixture, stirring constantly. Add the aroma, flour and ground almonds.

Wrap the resulting dough in cling film or put in a bag and refrigerate for 1 hour. Preheat oven to 170 degrees and line 2 baking trays with parchment paper.

Roll out the cooled dough on a well floured surface (don't forget to use the gluten-free flour again). Cut circles with a diameter of about 5-6 centimeters. Carefully transfer the cookies to the pan and press an almond in the center of each. Bake for 12-15 minutes until they start to turn pink.

Cool for 10 minutes, then sprinkle with powdered sugar before serving.
