The "Queen of Sheba" cake is a French classic. It is prepared with gluten-free flours and almond extract, which together with the melted chocolate in the base give sweetness and a pleasant aroma to the cake.

Required products :

  • 1/2 cup almond flour
  • 2 tablespoons gluten-free flour or plain
  • 10 tablespoons sugar
  • 1/4 teaspoon salt
  • 170 grams of dark chocolate (70% cocoa), coarsely chopped
  • 10 tablespoons butter, cut into pieces
  • 4 large eggs, at room temperature
  • 1/8 teaspoon almond extract
  • 1/4 teaspoon lemon juice
  • 1/8 teaspoon beehive salt (optional)
  • whipped cream for decoration (optional)

Method of preparation :

Preheat oven to 190 degrees.

In a medium bowl, mix the almond and gluten-free (or plain) flours, 2 tablespoons of sugar and 1/4 teaspoon of salt.

Melt the chocolate and butter in a metal bath in a water bath, stirring occasionally until completely melted and homogenized, then remove from the heat.

Separate the egg yolks from the whites. Put the almond extract in the egg yolks and stir to mix well. Beat the egg whites and lemon zest with a mixer on high speed until soft peaks form. Gradually add the remaining 8 tablespoons of sugar and beat until the tops are firm and shiny.

Beat the mixture with the flour and 1/4 of the protein mixture in the melted chocolate. Using a rubber spatula, carefully add and mix the remaining egg whites. Pour the resulting dough into a 20-22 cm form with a falling bottom and distribute evenly.

Bake the cake in the oven for 20-25 minutes or until done, let stand at room temperature for 10 minutes. Then separate the cake on the edge with a knife and take it out on a wire rack to cool completely for about 1 hour.

Serve by sprinkling with beehive salt and garnish with whipped cream if desired.
