How To Cook Gluten Free Cake With Oranges And Almonds - Recipe

Required products :

For the cake :

  • 4 eggs
  • 300 grams of almond flour
  • 315 grams of powdered sugar
  • 2 oranges
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cardamom
  • 1 baking powder
  • mascarpone
  • Orange peels

For orange syrup :

  • 1 orange, juice
  • 100 grams of powdered sugar
  • 60 milliliters of water

Method of preparation :

  • Wash the oranges and place them in a saucepan of suitable size. Cover them with cold water and cook without peeling them for 15 minutes.
  • Discard the water, pour fresh and cook again for 15 minutes. Repeat once more.
  • Cut the oranges into large pieces, clean the seeds and mash them together with the peel until a homogeneous mixture is obtained.
  • Use a mixer to beat the eggs and sugar.
  • Add the mashed oranges, almond flour, baking powder, cinnamon and cardamom and mix well with a wooden spoon.
  • Grease a form with a diameter of about 20 centimeters and cover it with baking paper.
  • Pour the finished dough and flatten with a spoon, if necessary.
  • Bake in a preheated oven at 160 degrees for about 1 hour or until fully cooked. Cover with aluminum foil so that it does not burn on top.
  • Once the marshmallow is baked, turn it over on a tray and let it cool completely.
  • To make the syrup, mix the freshly squeezed orange juice with the sugar and water in a saucepan and cook over low heat until the sugar has melted and the syrup has thickened. Remove from the heat and allow to cool.
  • Syrup the cake, sprinkle with orange peel and serve with mascarpone.
