If for one reason or another you do not consume gluten, you can prepare these cookies with coconut flour. They are also suitable for people who follow a low-carbohydrate diet, but in this case it is necessary to replace sugar with a suitable sweetener (stevia or erythritol, for example).

Required products :

  • 3/4 tea cup coconut flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup butter (melted)
  • 1/3 tea cup sugar
  • 2 teaspoons vanilla extract (or coconut)
  • 1 whole egg + 1 yolk
  • 1/2 cup dark chocolate, chopped
  • 1/2 cup grated coconut or coconut shavings

Method of preparation :

Line a large tray with paper.

In a bowl, mix the flour, baking powder and salt, stirring with a wire to get air into the mixture.

In a separate bowl, beat the melted butter and sugar.

Add the vanilla and eggs, combine. Pour the coconut flour into the liquid mixture and mix with a spatula. When you get a mushy dough, add the coconut and chocolate.

Mix all products and take 1 tablespoon of the mixture (if you have a small spoon of ice cream is most convenient for this purpose). Arrange the balls of dough in a tray, at a distance from each other (when baked, they will spill slightly).

Bake the cookies for 12 minutes, turning them over in the middle of the time.

Remove them from the oven and carefully remove them from the pan with a spatula. Cool completely on a wire rack, then store in a box.
