How To Cook Gluten Free Donuts With Blueberries And Lemon - Recipe

These delicious donuts are made with gluten-free flours, which makes them an excellent dessert choice for people who are intolerant or sensitive to gluten.

Required products :

  • 2 teaspoons coconut oil (or other)
  • 2 teaspoons universal gluten-free flour
  • 1/2 cup almond flour
  • 1/2 cup gluten-free oatmeal
  • 1/2 cup universal gluten-free flour
  • 1/4 cup sugar
  • 2 tablespoons vanilla flavored protein powder (or other)
  • 1 and 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup low-fat yogurt
  • 1/4 cup almond milk
  • 2 eggs
  • 1 tablespoon lemon peel, finely grated
  • 1 tablespoon coconut oil (or other)
  • 1/2 teaspoon vanilla
  • 1/4 cup fresh blueberries
  • 1 teaspoon powdered sugar or honey (optional)

* A tea cup is used to measure the quantities.

Method of preparation :

Preheat oven to 160 degrees.

In a small bowl, mix 2 teaspoons of coconut oil and gluten-free flour. Spread the donut tins with the mixture.

In a medium bowl, combine the almond flour, gluten-free oatmeal, 1/2 cup universal gluten-free flour, sugar, protein powder, baking powder, baking soda and salt.

In a large bowl, whisk together the yogurt, almond milk, eggs, lemon zest, 1 tablespoon coconut oil and vanilla.

Add the flour mixture to the milk mixture and beat until well combined. Pour about 1/4 tea cup of the dough into each of the prepared molds. Spread the dough evenly. Put 6 blueberries in each donut and bake for about 15 minutes or until done.

Cool for about 5 minutes, removing from the oven and leaving at room temperature. Using a thin metal spatula or knife, separate the edges of the donuts and invert the molds to release them and place on a wire rack to cool. Before serving, garnish with powdered sugar or honey on the donuts as desired.
