Required products :

1-2 carrots
3-4 teaspoons flour (the exact amount depends on the size and juiciness of the carrots)
salt
water

For the tomato sauce:

3 tomatoes
1 sweet red pepper
3 tablespoons oil
salt and ground black pepper to taste
1 teaspoon dried oregano

Method of preparation :

Peel a carrot, boil it or bake it until soft. If you decide to bake, wrap them in foil and place in the oven for 40 minutes at a temperature of 190 degrees. Cooking is faster than baking, but carrots will be more watery and you will need to use more flour. When they are ready, grind with a blender to obtain a puree. No lumps should remain.

 

Add the flour to it and knead a thick dough. Add flour until the dough stops sticking to your hands. Shape like a sausage and place it on a plate sprinkled with flour. Cut into pieces.

 

From each form small balls, the surface of which is pressed with a fork.

 

Pour a large amount of water into a saucepan, add a little salt and place the dish on the stove. When the water boils, put the dough molds in it. Do not pour them all at once, because they will stick together. Let them cook for a few minutes without closing the pot with a lid on high heat. Surfacing is a sign that they are ready. Remove them with a slotted spoon. Cut the tomatoes into small pieces.

 

Cut the red pepper as well. Heat the oil in a suitable pan and pour in the pieces of tomatoes and peppers. Add the spices, stir and let the sauce simmer under a lid on low heat for about 15 minutes.


Put the prepared carrot gnocchi in a suitable container in which you will serve and pour the tomato juice. Garnish with chopped green spices and you can enjoy the vegetable dish.
