How To Cook Gnocchi With Vegetables And Spinach Pesto - Recipe

Required products :

  • 500 grams of gnocchi
  • 350 grams of broccoli, cut into roses
  • 100 grams of cherry tomatoes, halved
  • 1 1/2 tablespoons olive oil
  • 1 teaspoon hot pepper flakes
  • 200 grams of spinach

for spinach pesto:

  • 1 clove garlic
  • 30 grams of parmesan
  • 30 grams of parsley
  • 2 tablespoons olive oil
  • the juice of 1 lemon

Method of preparation :

Preheat oven to 220 degrees.

Bring water to a boil and boil the gnocchi for 1 minute, then drain them with a slotted spoon.

Put the broccoli, cherry tomatoes and gnocchi in a pan. Drizzle with a little olive oil and sprinkle with hot pepper. Stir and bake for 15 minutes. Add 150 grams of spinach and return to the oven for another 2 minutes.

Meanwhile, put the remaining 50 grams of spinach in a food processor with the other ingredients for the pesto and 100 milliliters of water. Blend until smooth, season to taste.

Serve the vegetables and add a spoonful of spinach pesto.
