Required products :

  • 1 teaspoon water
  • 8 tablespoons butter (120 grams)
  • 3/4 teaspoon salt
  • 1 1/4 teaspoon flour
  • 1 tablespoon Dijon mustard
  • 1/2 cup grated Parmesan cheese
  • 3 eggs
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons finely chopped onion feathers
  • olive oil

Method of preparation :

Bring the water to a boil, along with the butter and salt. Add the flour and stir constantly with a wooden spoon to make a dough. Reduce the heat and continue to stir until the dough begins to form into a ball and separate from the sides of the pan.

Remove from the heat and add the mustard and parmesan to the mixture, stirring until homogeneous. Add the eggs one by one, stirring constantly to get a creamy mixture. Finally add the spices and onions. Transfer the dough to a large plastic bag with a zipper and let the mixture rest for about 15-25 minutes at room temperature.

Meanwhile, bring a large saucepan of salted water to a boil. Cut about 2 centimeters from one corner of the bag and start squeezing the dough, using a knife, cut about 3 centimeters of gnocchi, directly on the boiling water.

Keep making gnocchi in the same way as you can for a minute.

Let them boil for 3 minutes and remove them from the hot water with a slotted spoon. Arrange them in a large pan and pour a little olive oil over them.

When you have finished cooking all the gnocchi, you can store them chilled in the refrigerator.
