Method of preparation :
Preheat oven to 220 degrees. Cover the bottom of a large baking sheet with parchment paper and pour the diced pumpkin, Brussels sprouts, 2 tablespoons olive oil, salt and pepper to taste. Bake for 15 to 18 minutes or until vegetables are tender.
In a bowl, mix leeks, lemon juice, honey, sherry vinegar, mustard, tarragon, 2 tablespoons olive oil, salt and pepper to taste.
In a large bowl, combine the kale, celery root, apple slices, hazelnuts and roasted vegetables. Season with dressing and stir. Garnish with radishes and grated cheese. Cover and refrigerate for at least 1 hour before serving.
