How To Cook Gourmet Salad With Kale, Pumpkin And Brussels Sprouts - Recipe

Kale salad with nutmeg and Brussels sprouts, sprinkled with a special vinaigrette dressing. For garnish - toasted hazelnuts and Parmesan cheese. Gourmet salad that you can serve to your special guests.

Required products :

  • 450 grams of nutmeg, peeled, cleaned and cut into small cubes
  • 230 grams of Brussels sprouts, cut in half
  • 1/4 cup olive oil
  • salt and pepper to taste
  • 1 medium leek, finely chopped
  • 2 tablespoons lemon juice
  • 2 tablespoons honey
  • 2 tablespoons sherry vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon fresh tarragon, chopped
  • 4 cups kale, chopped
  • 1 cup celery root, chopped
  • 1 medium red apple, thinly sliced
  • 1/4 cup blanched hazelnuts, toasted and coarsely chopped
  • 1/4 cup Parmigiano Reggiano cheese (or yellow cheese), grated
  • 1 radish, cut into thin circles

Method of preparation :

Preheat oven to 220 degrees. Cover the bottom of a large baking sheet with parchment paper and pour the diced pumpkin, Brussels sprouts, 2 tablespoons olive oil, salt and pepper to taste. Bake for 15 to 18 minutes or until vegetables are tender.

In a bowl, mix leeks, lemon juice, honey, sherry vinegar, mustard, tarragon, 2 tablespoons olive oil, salt and pepper to taste.

In a large bowl, combine the kale, celery root, apple slices, hazelnuts and roasted vegetables. Season with dressing and stir. Garnish with radishes and grated cheese. Cover and refrigerate for at least 1 hour before serving.
