Required products :

  • 2 tablespoons oil
  • 2 roasted red peppers, peeled and finely chopped
  • 2 roasted green peppers, peeled and finely chopped
  • 3 tomatoes, peeled and cut into cubes
  • 1 onion, finely chopped
  • 2 cloves garlic, pressed
  • 400 grams of shredded cheese
  • 6 eggs, lightly beaten
  • 2 tablespoons fresh parsley, finely chopped
  • salt and pepper to taste

Method of preparation :

  • Heat the oil in a large skillet over medium heat.
  • Saute onion and garlic for 2 minutes until soft.
  • Add the peppers, mix well and cook for another 5 minutes under a lid.
  • Add the tomatoes, cover the pan again and cook for another 5-7 minutes.
  • Add the shredded cheese, stir and pour over the eggs.
  • Continue cooking, stirring occasionally for another 2-3 minutes or until the eggs are ready.
  • Add parsley, stir and remove from the heat.
  • Serve mish-masha warm, garnished with fresh parsley leaves.
