These easy homemade granola bars have a very pleasant aroma of chocolate and coconut. Do not hesitate to change the ingredients according to your taste. You can use maple syrup or honey, but they stick best with rice syrup.

Required products :

  • 3 tea cups oatmeal
  • 1 teaspoon rice popcorn or rice cakes
  • 1 teaspoon chocolate chips
  • 1 teaspoon sweetened coconut chips
  • 1/4 teaspoon salt
  • 2/3 tea cup rice syrup (or other)
  • 1/2 cup almond oil (or other)
  • 1 teaspoon coconut extract (or other)

Method of preparation :

Preheat oven to 160 degrees. Place parchment paper for baking in a 22x30 cm tray. Coat the paper
with coconut oil or other grease.

Mix in a large bowl the oatmeal, rice popcorn, chocolate and coconut chips and salt.

Mix the rice syrup, almond oil and coconut extract in a microwave-safe bowl. Heat for 30 seconds. You
can also heat in a pan on medium heat for 1 minute. Then add the mixture to the dry ingredients and mix so that they mix well. Transfer the mixture to the prepared pan and spread evenly with a spatula.

If you want the bars to be more chewy and not crispy, bake them for 20-25 minutes or until lightly golden at the edges.
If you want crispy bars, bake them until golden brown on the edge or for 30-35 minutes.
Both types will be soft while warm and will harden when cooled.

After baking, allow the bars to cool for about 10 minutes. Cut them into 24 pieces. Separate them from the parchment paper
after they have cooled completely, ie after about 30 minutes.

You can store granola bars individually packaged for up to 1 week at room temperature.
