Required products :

for the base:

  • 1 cup wholemeal flour
  • 1/4 cup powdered sugar
  • 2 tablespoons cornstarch
  • 1/2 teaspoon Himalayan salt
  • 6 tablespoons cold butter, cut into small cubes
  • 2 tablespoons olive oil
  • grease for spreading

for topping:

  • 3/4 cup sugar
  • 3/4 cup freshly squeezed grapefruit juice
  • 3 tablespoons cornstarch
  • 1/3 teaspoon sea salt
  • 2 large egg yolks
  • 1 and 1/2 tablespoons Campari liqueur

* A tea cup is used to measure the quantities.

Method of preparation

the basis:

Preheat oven to 180 degrees.

In a bowl, mix the flour, powdered sugar, cornstarch, Himalayan salt and stir. Pour into a blender, add the butter and beat. Sprinkle with olive oil and blend until the mixture is moist and crumbly.

Pour it into a greased pan and distribute evenly, pressing lightly with your fingers. Bake for 25-30 minutes or until lightly browned, then cool to room temperature.

the topping:

Mix the sugar, grapefruit juice, cornstarch and salt in a small saucepan. Heat the stove over medium heat and let the mixture boil, stirring constantly until it thickens. Beat the egg yolks with half of the grapefruit mixture, then pour into the pan. Bring to a boil over medium heat, stirring constantly, then remove from the heat. Pour the liqueur inside, stir and strain through a sieve. Discard solids.

Spread the grapefruit mixture on the base. Cover with foil and refrigerate for 3-4 hours. Cut into 16 squares and serve.
