How To Cook Grapefruit Salad With Avocado And Pistachio - Recipe

The simplicity of this grapefruit salad recipe really allows the aromas of grapefruit and avocado to shine. If you haven't tried wild chervil, it's worth a look. The herb resembles lace parsley and, although a little, looks like licorice and anise with hints of basil. Serve as a side dish to roast pork.

Required products :

  • 2 tablespoons balsamic vinegar
  • 3 large red grapefruits
  • 1 tablespoon shallots, finely chopped
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 3 tablespoons extra virgin olive oil
  • 1/4 teaspoon salt
  • ground black pepper
  • 2 pieces of hard and ripe avocado, thinly sliced
  • 1/3 tea cup unsalted roasted pistachios
  • 1/4 tea cup fresh wild cherry (or 1 small bunch of red watercress leaves)
  • beehive salt (or maldon), for serving

Method of preparation :

Wash, peel and peel the grapefruit, then cut it into round pieces.

Beat the balsamic vinegar, shallots, honey and mustard in a medium bowl. Pour olive oil in a thin stream and stir until the dressing is homogenized. Season with salt and pepper.

Arrange the grapefruit pieces on a serving platter, place the avocado slices on top, sprinkle with pistachios and wild cherry or red watercress leaves) and season with the dressing. Sprinkle with maldon salt (or kosher salt) and ground black pepper if desired.
