Required products :

  • 2 tablespoons extra virgin olive oil
  • 1/4 cup onion, chopped
  • 1 packet of baby spinach
  • 2 teaspoons fresh dill, chopped
  • 2 teaspoons fresh parsley, chopped
  • 1 clove garlic, chopped
  • 1/4 teaspoon black pepper
  • 1/2 cup ricotta cheese
  • 6 tablespoons feta cheese, crushed
  • 500 grams of wholemeal pizza dough
  • 1/2 cup mozzarella cheese, grated

* A tea cup is used to measure the quantities.

Method of preparation :

Preheat oven to 250 degrees.

Put a sheet of baking paper in a pan and grease with olive oil.

Heat 1 tablespoon olive oil in a large skillet over medium heat. Fry the onions, stirring often, until soft. Add the spinach in batches and cook, stirring until soft, then add the dill, parsley, garlic and black pepper and stir for about 1 minute. Transfer the filling mixture to a large bowl and add the ricotta and feta cheese, stirring.

Flour a kitchen surface and place the wholemeal dough, cut it into 4 equal parts. Roll each piece into a circle about 18 cm in diameter. Place 1/2 cup of the filling on one half of each circle, leaving a 2-3 cm distance at the edges without the mixture. Sprinkle with 2 tablespoons of mozzarella and fold the dough so that it closes. Seal the edges with a fork. Make 3 small incisions in the top to let off the steam when baking. Sprinkle the calzone with the remaining 1 tablespoon of olive oil.

Transfer the shaped calzone pie to a pan and bake in the oven until browned or about 15 minutes. Allow to cool for 5 minutes before serving.
