Required products :

  • 1 kg of leeks, finely chopped
  • 4 eggs
  • 3/4 tea cup of fresh milk
  • 225 grams of yellow cheese
  • 1 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 2 full tablespoons finely chopped fresh parsley
  • 140 grams of olive oil
  • 1 package of pie crusts of 500 grams

Method of preparation :

Stew onions in half the fat for 10 minutes. Add parsley and season.

In a bowl, mix the eggs and milk, grate the cheese and add it. Mix with leeks and stir.

Turn on the oven to preheat to 175 degrees while assembling the pie.

Grease a pan with a diameter of about 25 centimeters.

Put half of the crusts on the bottom of the pan, spreading each one. Spread the filling on top and cover with the remaining crusts, spreading each again - place the crusts so that their corners are in different directions.

With a sharp knife, cut and bake for 35 minutes until the pie acquires a golden and crispy crust.

If you want, as soon as you take it out of the oven, spray with a little water and cover with a towel to soften. If you prefer it to be crispy, skip this step and serve immediately.
