Heat 1/4 cup of olive oil and fry the lemon slices until charred at the edges for about 2 minutes. Transfer them to a bowl.
Crush the feta cheese with the lemons, add the oregano, the remaining olive oil, season with salt and pepper. Stir and set aside.
Return the pan to the hob and fry the peppers until cooked through, about 6-8 minutes. Cool them and cut them lengthwise.
Add onions, cucumbers, tomatoes, vinegar and a large pinch of salt. Stir and serve.
