Necessary products:

 

  • 1 cabbage
  • 500 grams of minced beef
  • 1/2 cup rice
  • 2 tablespoons olive oil
  • 1 bunch fresh onions
  • 2 cloves crushed garlic
  • 1/4 cup chopped dill
  • 1/4 tea cup chopped parsley
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 3 teaspoons broth

 

for the sauce:

 

  • 4 eggs
  • juice of two lemons
  • pinch of salt

 

Method of preparation:


Wash, clean and blanch the cabbage in boiling salted water. After the leaves soften, strain, cool and dry. In a pan heat the olive oil, fry the chopped garlic and onion.

Add the minced meat, rice, salt, pepper, dill and parsley. Pour half of the broth and let the filling simmer until the liquid is reduced.

Preheat the oven to 180 degrees, take a cabbage leaf, scoop a spoonful of the minced meat mixture, roll it up and press the edges. In the same way, fold the remaining sarma and arrange it tightly next to each other in an oiled clay pot.

 

Pour the remaining broth, put a lid and bake for 90 minutes. Meanwhile, prepare the filling. Beat the eggs in a water bath mixed with lemon juice and a pinch of salt.

 

Stir until thickened. When the sarma is ready, serve the dish garnished with the resulting sauce and sprinkle with fresh dill.
