How To Cook Green Beans With Mushrooms, Cream And Crispy Onions - Recipe

Required products :

for onions:

  • 2 teaspoons shallots
  • 3 tablespoons flour
  • 3/4 teaspoon salt
  • 1 teaspoon oil

for beans:

  • 3 tablespoons salt
  • 700 grams of green beans
  • 4 tablespoons butter
  • 450 grams of mushrooms, chopped
  • 1/2 teaspoon salt
  • a pinch of nutmeg
  • 4 tablespoons flour
  • 3/4 tea cup chicken broth
  • 1 teaspoon cream

Method of preparation :

Start by cooking the onion by cutting it into thin circles. Sprinkle with flour and salt, stir to separate the onions and roll in flour.

Arrange them in a large pan and bake at 180 degrees for 35 minutes, stirring every 5 minutes to turn them over.

When the onion is browned, remove from the oven.

Meanwhile, blanch the beans in salted water for 10 minutes and drain.

Melt the butter in a pan and fry the mushrooms, seasoned with salt, nutmeg and pepper. When soft after about 3-4 minutes, add the flour, stir to stick to the mushrooms and absorb moisture. Gradually add the broth and cream, stirring to dissolve the flour. Cook until the sauce thickens slightly.

Mix the beans with the mushroom sauce and pour into a wide plate (maybe a ceramic pan), sprinkle with toasted onions on top and serve.
