Method of preparation :
Mix the herbs with olive oil, lime juice, garlic, salt and 2 tablespoons of almonds. Blend to obtain a homogeneous mixture, similar to pesto. If necessary, add more salt or lemon to taste.
Add 3/4 cup of green sauce to the rice. Add the avocado and green onions, stir.
Serve the rice and put eggs and tomatoes in each portion. Add more of the herbal sauce and sprinkle with almonds.
