How To Cook Grilled Chicken Fillets With Balsamic, Tomato And Mozzarella - Recipe

Required products :

  • 4 pieces of chicken breast
  • 1/3 tea cup olive oil
  • juice from 2 lemons
  • 2 cloves garlic
  • 6 large basil leaves
  • 1 teaspoon sea salt
  • 1/4 teaspoon white pepper
  • 3/4 teaspoon balsamic vinegar
  • 4 slices fresh mozzarella
  • 2-3 medium tomatoes - cut into circles
  • fresh basil for garnish

Method of preparation :

 

Mash the olive oil, lemon juice, garlic, basil, salt and pepper until smooth. Try and, if necessary, add more salt.

Put the meat in a zippered bag and pour the mixture over the meat, making sure each piece is well covered. Close the bag and refrigerate for 1-2 hours to marinate.

While the chicken is marinating, prepare the balsamic reduction. Put the balsamic vinegar in a saucepan and bring to a boil, then reduce the temperature and simmer until reduced for about 8-10 minutes. You need to achieve a thick consistency, like syrup, to stick to the spoon. When you reach the required density, remove from the heat, cover and set aside.

Heat a grill or grill.

Remove the chicken from the bag and grill for 8-10 minutes on each side. In the last minutes of cooking the chicken, put on each piece a slice of mozzarella and 1-2 slices of tomato. Cook for another 2-3 minutes.

Remove from the heat and garnish with balsamic sauce and a little chopped basil leaves.
