So many people are on autopilot when they walk into a meat shop that they always reach for boneless chicken breasts. Try to include juicy upper chicken legs in your menu more often, starting with this delicious recipe.

Mix in a bowl the coconut oil, ginger, curry and salt. Transfer half of the mixture to a small bowl. Season the chicken upper legs in the marinade bowl. Bake on a grill pan or on a grill, heated to a high temperature, for about 8 minutes on the side or until done.
Stew the spinach in a large skillet over medium heat, stirring until soft. If desired, season with a pinch of salt. Serve the spinach on a plate, garnish with the chicken, sprinkle with the remaining marinade, radishes, almonds and coriander.
