How To Cook Grilled Pork Knuckle With Beer And Cheddar Sauce - Recipe

Required products :

  • 1 pork shank
  • 400 milliliters of dark beer
  • 3 cloves garlic
  • 1 tablespoon mixture of different peppercorns
  • 1 bay leaf
  • 1 cinnamon stick
  • 2 tablespoons salt
  • oil
  • pickle for serving (can pickles, olives, capers)

For the sauce:

  • 300 milliliters of thick cooking cream
  • 300 grams of cheddar cheese
  • 100 milliliters of dark beer
  • 2 tablespoons mustard with beans
  • 1 teaspoon ground black pepper
  • left


Method of preparation :

Pour 3 liters of water into a saucepan, put in it the crushed garlic, cinnamon, bay leaf and peppercorns. Put on the stove and bring the liquid to a boil. Then add salt, put the shank and pour the beer. The broth should boil again, reduce the heat to a minimum and cook the shank under a lid for an hour and a half.

Then remove it from the broth and grease with oil.

Make the sauce by grating the cheddar cheese and mixing it with the cream and mustard. Season with paprika, salt, pour the beer and put the combination on medium heat. Heat, stirring, until you get a homogeneous sauce. Remove from the heat.

Bake the shank on the grill (about 30 minutes), turning it periodically on all sides.

When ready, place in a plate, cover with aluminum foil and let rest for 10 minutes. Then cut and serve with the fragrant sauce and pickle garnish.
