Red fish is exotic and very beautiful. You can find it in the relevant specialty stores or in large supermarkets. You can always replace it with any other species of large fish if desired.

Required products :

  • 1 whole fish red snapper or other (about 1 kg), cleaned
  • 1 onion, coarsely chopped
  • 2 cloves garlic, chopped
  • 1/2 bunch fresh parsley, chopped
  • 2 tablespoons fresh tarragon, chopped
  • 2 tablespoons fresh mint leaves
  • 1 tablespoon lemon zest
  • 1/4 cup lemon juice
  • 1 and 1/2 teaspoons of sea salt
  • 4 tablespoons olive oil

Method of preparation :

Make 3-4 parallel cuts of the fish and cut it in half at an angle of 45 degrees to the bones.

Blend onion, garlic, parsley, tarragon, mint, lemon zest and juice, salt and 2 tablespoons olive oil. Put the fish in a shallow dish and season with marinade on both sides. Cover and refrigerate for 30 minutes.

Heat the grill to a high temperature, soak it. Separate the excess marinade from the fish and bake for 5-7 minutes on one side. Then turn from the other, reduce the temperature and close the grill grill with a lid. Bake for 15-20 minutes or until the fish is ready and tender.

Serve it with white wine. Sauvignon Blanc is the perfect addition to fresh grilled fish.
